Cranberry Rusks
This is really easy to make. The oven is going to do most of the work to get the Rusks to have its traditional crunchy texture.
Besides, everyone may think you rock if you serve them homemade Rusks this long weekend.
Ingredients:
1 kg Self-raising flour
500 g Butter
2 cups white sugar
500 ml Buttermilk
1/2 tsp vanilla essence
Grated rind of 1 lemon
2 eggs
1/2 cup roughly chopped cranberries
1/2 cup roughly chopped nuts
How to make:
Preheat oven 180°C
1. In a large mixing bowl add the flour and cubed butter, rub the two together until reserves breadcrumbs like mixture and then add the sugar and mix.
2. In a separate midium bowl, whisk the buttermilk, vanilla, lemon rinds and eggs together. Add to the flour mixture together with the cranberries and nuts. Mix until everything is combined.
3. Put the dough in a greased pan or shallow oven tray or two bread loaf tins and flatten slightly.
4. Bake for 50 - 60 minutes or until done. You can test by inserting a skewer which should come out clean.
5. Remove from the oven and leave to cool before cutting. You can cut into diagonal thin slices or into fingers. Place in a baking tray and allow to dry out at 100°C for about 2 hours.
