 Cranberry Rusks  This is really easy to make. The oven is going to do most of the work to get the Rusks to have its traditional crunchy texture. Besides, everyone may think you rock if you serve them homemade Rusks this long weekend.  Ingredients:  1 kg Self-raising flour 500 g Butter 2 cups white sugar 500 ml Buttermilk 1/2 tsp vanilla essence  Grated rind of 1 lemon 2 eggs 1/2 cup roughly chopped cranberries  1/2 cup roughly chopped nuts  How to make: Preheat oven 180°C  1. In a large mixing bowl add the flour and cubed butter, rub the two together until reserves breadcrumbs like mixture and then add the sugar and mix.  2.
